Actually, for evolution to occur, organisms need to maintain a certain environment for at least a million years. Since our environment is constantly changing every decade, evolution has quite stopped for us. So no, you won't be a pig. But you will be if you keep eating like one.
for evolution you do not need a consistent environment, but you are right about evolution being almost halted, evolution is essentially survival of the fittest but now the unfit are aided by technology thus ending evolution in humans, over species are still able too go through the proccess of evolution but with todays modern technology in 2-3 million years time (if the human race still exists) animal species will adapted to a point where they could live comfortably with bulldozer and stuff like that
